  • 170g whole wheat flour.
  • 60g coconut sugar/palm sugar.
  • 1 teaspoon baking powder.
  • ¼ teaspoon baking soda.
  • ¼ teaspoon salt.
  • 350g mashed bananas.
  • 4 tablespoon olive oil.
  • 1 tablespoon ground flaxseed.
  • 3 tablespoon water.
  • 1 tablespoon white vinegar.
  • 1 tablespoon vanilla extract.
  • Chopped walnuts.

 

Method

  1. Preheat the oven to 350F.
  2. Line muffin paper liners in a muffin tray and set aside for later.
  3. Add whole wheat flour, coconut sugar, baking powder, baking soda, and salt to a bowl and mix it thoroughly. Set it aside.
  4. In another bowl, mash the banana and add olive oil, ground flaxseed, white vinegar, vanilla extract, water and mix it well until fully combined.
